You all know how much I love getting out and about and meeting our local producers and this was absolutely the case when I visited Caroline and Greg at the home of Just Got Laid Free Range Eggs. I was welcomed with open arms and when I walked into the kitchen my heart sung as I noticed that one of their friends was busy making a chutney and the whole house just smelt divine! Said friend had also whipped up some delicious muffins which we had for morning tea while we chatted endlessly about food which meant that I felt completely at home.
But anyway, back to the story of these delicious eggs! Caroline and Greg Sandral started their farm at Sunnyside (near Balberra, just south of Mackay) when they were looking to diversify slightly from their existing farm of cane. Greg still runs the cane farm but the chickens have helped them give their soil a new lease of life, literally! The chickens enjoy plenty of space with less than 500 per hectare and they currently have around 1000 chickens at the moment with plans to grow that number.
What you might not know is that Caroline and Greg have also created a bit of a niche market and are now producing and selling duck eggs. Rumour has it that duck eggs make the best and fluffiest pavlovas so I might just have to try that out shortly! I got a sneak peak at some of the younger ducklings on my visit (way too cute) and I can see this becoming very popular in our region.
Just Got Laid Free Range Eggs are used at many cafes and restaurants including Coco Cubano and Lagoons Café & Gallery (at the Botannical Gardens) and their eggs are also stocked at Camilleri’s Farm Market, Mifsuds and Vegies Unlimited. We also use Just Got Laid Free Range Eggs in our catering and cooking classes.
