If you are like me, you are always looking for some new ideas for an afternoon snack, these Honey & Muesli Balls are just perfect for that! Plus they are a great lunchbox filler for the kids and can easily be made nut free by using nut free muesli. We recently made this during one of our Kids Kitchen classes and the kids loved it. This recipe is an easy one to get the kids involved so let them have some fun and help you out with the measuring and rolling the balls. We used local Bee2U honey which is just sensational!
Honey & Muesli Balls – Makes 20
2 ½ cups toasted muesli
1 cup pitted dates or prunes
½ cup honey
¼ tsp mixed spice
Place the muesli, prunes/dates, honey and mixed spice in a food processor until well combined. Add a little more honey if the mix isn’t sticking together properly. Using 1 tbsp of the mixture at a time, roll into a ball and place on a tray. Refrigerate for 30 minutes or until firm (but you can taste test along the way). Store muesli balls in an airtight container in the fridge.
